You're standing in the grocery aisle looking at a whole chicken for $1.99 a pound. Then you see ours, and it costs a good bit more. That's a fair thing to hesitate over. Nobody should spend more money just because a farm has a nice logo and a photo of a barn.
So let's skip the marketing and talk about what's actually different. Some of what you've heard about factory farmed chicken is true and worth knowing. Some of it is flatly false, and we're going to tell you which is which, even when the myth would help us sell chicken.
First, let's kill the hormone myth
You have probably seen a label that says "raised without hormones." You may have assumed that other chicken has them.
It doesn't. Hormones have been prohibited in United States poultry production since the 1950s. There is no chicken sold in this country, from any farm of any size, that was given growth hormones. When a package advertises "no hormones added," federal labeling rules require it to also carry a note explaining that hormones aren't allowed in poultry at all. It's marketing dressed up as a health claim.
We're telling you this because we'd rather you trust the rest of what we say. If we let you believe the hormone story, you'd eventually find out it was false, and then you'd have every reason to doubt everything else on this page.
So here's the real question: if it isn't hormones, why does a commercial broiler reach market weight in about six weeks when it used to take twice that long?
The answer is genetics and feed access. The Cornish Cross is the product of decades of selective breeding for one trait: converting feed into breast meat as fast as biologically possible. We raise Cornish Cross too. It's a remarkably efficient bird.
The difference isn't the genetics. It's what happens to that bird for the eight weeks it's alive on our pasture.
What "pasture raised" actually means on our farm
The label "free range" only requires that birds have some access to the outdoors. In practice that can mean a small door at the end of a house holding tens of thousands of birds, most of which will never find it or use it.
Here's what we do instead. Our birds live on grass in movable shelters, and we move them to fresh pasture every single day. Every morning they're standing on ground they've never been on before, with new grass, new clover, new bugs, new grit.
That daily move matters for two reasons. The birds are eating live forage and insects on top of their feed, which changes what ends up in the meat. And they're never standing in accumulated manure, which is the single biggest driver of the ammonia, respiratory stress, and pathogen load that define confinement housing.

The nutrition question, answered honestly
Here's where we're going to be more careful than most farm blogs.
The research on pastured eggs is strong and well documented. A Penn State study comparing eggs from pastured hens to those from hens on a standard commercial diet found the pastured eggs had roughly twice the vitamin E and long chain omega 3 fats, more than double the total omega 3s, and less than half the omega 6 to omega 3 ratio. That's a large, clearly measured difference.
The research on pastured meat is real but thinner, and you should know that. There's good evidence that birds with genuine forage access produce meat with more omega 3 fatty acids and a more favorable omega 6 to omega 3 balance than confinement raised birds. Some producers have had their own meat lab tested and published the results, like Grass Roots Farmers' Cooperative, which found substantially more omega 3 in their pastured breast and thigh meat than in conventional samples. But that's a smaller body of work than the egg research, and the results vary depending on how much forage the birds really get.
We're not going to hand you an egg statistic and let you assume it applies to a whole chicken. What we'll tell you is this: the mechanism is the same. Birds eating green forage and insects deposit different fats and fat soluble vitamins in their tissue than birds eating only grain in a barn. Our birds get that forage every day. The nutritional difference follows from the practice, and the size of it depends on how honestly a farm does the practice.
Why omega 3s matter at all: your body can't make them, so they have to come from food. The modern American diet is heavily skewed toward omega 6, and most nutrition researchers consider the ratio between the two more important than the absolute amount of either. Food from animals that ate green plants moves that ratio in a better direction.
Chlorine, and why the EU won't take American chicken
This one surprises people.
Most conventional American poultry is processed through a water immersion chill tank, and those tanks typically contain antimicrobial agents. Chlorine based rinses have long been standard, used at concentrations meant to knock down salmonella and campylobacter on the carcass surface.
The European Union has banned this practice, and banned imports of poultry treated this way, since 1997. The interesting part is the reasoning. The EU's objection isn't mainly that chlorine residue will hurt you. It's that an antimicrobial dunk at the end of the line functions as a way to compensate for conditions upstream. Their position is that if the bird was raised and handled cleanly, you shouldn't need to disinfect it at the finish. American regulators disagree and consider the treatments safe and effective. It's been a live trade dispute for nearly thirty years.
We don't use chlorine baths. Our birds are processed on farm in a clean, controlled setting, chilled on ice, and frozen. That's it.
Processing on our own farm also means the birds aren't loaded into a truck and hauled to a distant plant. They go from pasture to processing in the same place they were raised. Less handling, less stress, less contamination opportunity, and no shared water tank with thousands of birds from other farms.
The water you're paying for
Now the part that hits your wallet directly.
When a chicken goes through a water immersion chill tank, it absorbs water. USDA requires that absorbed water be declared on the label, and according to FSIS, it is not unusual for poultry to declare 8 to 12 percent retained water.
Read that again with a price tag attached. On a bird labeled 10 percent retained water, roughly a tenth of what you're paying for by weight is chill tank water. Buy a five pound chicken and you may be carrying home half a pound of water at chicken prices.
Look at the fine print next time you're in the store. The percentage is required to be there. Compare two packages and you may find they're not the same product at all.
That's raw, single ingredient chicken. It gets more significant with enhanced or "seasoned" products, where a saltwater or broth solution is deliberately injected into the meat. These are labeled with phrases like "contains up to 15% chicken broth" or "enhanced with a solution of water, salt, and natural flavoring." The solution adds weight, adds a lot of sodium, and makes a fast growing bird taste juicier than it otherwise would. It's legal and disclosed. It's also not chicken.
Our birds are ice chilled rather than tank chilled, and we don't inject anything. When you buy five pounds of our chicken, you're buying five pounds of chicken.
That changes the price comparison more than people expect. Adjust that $1.99 per pound for 10 percent water and the real cost of the meat is higher than the sticker says. The gap between our chicken and the grocery store chicken is narrower than it first appears, and you're closing it with actual food.
So is it worth the money?
Here's our honest accounting.
It is not true that conventional chicken is full of hormones. It is not true that a store bought chicken will hurt you. Millions of people eat it without incident, and for a family that's stretching every dollar, cheap protein on the table is a real and legitimate good. We're not going to pretend otherwise.
What is true is this. Our birds live on fresh grass every day of their lives. They eat live forage and insects along with a quality feed, and that changes the fat composition of the meat. They're never chlorine washed. They're processed here, on our farm, by us. Nothing is injected into them, and you're not paying meat prices for tank water.
You're also paying for a thing that's harder to put on a label. You can drive out here and look at the birds. You can see the shelters, watch us move them, and ask what's in the feed. Almost nobody who buys chicken in America can do that.
Cook one and taste it. That's the part no study measures, and it's usually what makes up people's minds.
